Editor’s Note: Happy National Punch Day! To celebrate, we’d like to journey down to Florida, to explore the creation of everyone’s favorite punch ingredient – rum!

Sitting on Florida’s Siesta Key beach in 2007 sipping El Dorado 12 Year Old rum, Troy Roberts decided to take his love for the beverage to a new level. He ordered his still and prepared for the opening of the first rum microdistillery in Florida, Drum Circle Distilling. Six years later, each of his three core rums have won prestigious awards including Gold at the Miami Rum Renaissance. We asked Troy where he learned the art of rum-making and his background with the spirit beyond drinking enjoyment. “The manufacturer showed us how to operate the equipment, but we learned how to make great rum by visiting other distilleries, reading lots of materials, but mostly through experimentation. There were lots of bad batches early on, but through trial and error, we’ve created rums that we are very proud of. And we think they speak for themselves.”

Drum Circle, named after a local weekly beach event, currently makes three rums as part of their Siesta Key brand: Silver, Gold and Spiced. Troy told us that his goal was always to make the best quality rums possible. “We start by selecting the highest grade of molasses. We use all real spices, no liquid flavorings. And we use honey instead of corn syrup. We know this will result in the best flavored rums on the market.” Troy further noted that quality products cost more but that it’s totally worth it. And it’s hard to deny the distillery’s success: tripled sales in Florida over last year and distribution to 13 other states through Total Wine’s Spirits Direct program. “We’ve already ordered another fermentation tank and my business partner Tom Clarke and I work well over 40 hours per week. Our distillery operates a lot!”

In addition to quality ingredients, Troy noted some other important factors necessary when making the best rums available. He first pointed to their still, custom made and affectionately known by the manufacturer’s name CARL. “CARL uses a lot of copper, which interacts with and removes harsh molecules from the vapor during the distillation process. The copper needs to be clean to be effective during this process. We meticulously rejuvenate the copper by regularly cleaning it with a citric acid wash.” In addition, the yeasts, the recipes, and the skill of the distiller all come together in the final products.

DrumCircleDistillingDrum Circle has been very busy trying to stay ahead of the curve and making enough rum. In addition to the Rum Renaissance and nationwide program with Total Wine & More, Drum Circle got some additional notoriety this year when their Spiced Rum was featured in the Dole Whip, a specialty drink made at Epcot’s International Flower and Garden Festival this year. Other projects include perfecting a fourth rum. Troy said, “We are currently creating a Reserve version of our spiced rum, aging it in whiskey barrels. The aging process makes some spices more prominent while subduing others, so we tinkered with the final recipe. I originally made this rum for me, but I let others taste it and was finally convinced to make enough to sell. We are currently aging that now.” You could tell by the excitement in Troy’s voice that he loves this new rum.

Troy wrapped up our chat by saying, “This is a fun and challenging business. There is a lot of hard and physical work, but it’s a great feeling to create a quality product. I know we have something special here.”

OK, this week of puns has pretty much jumped the shark … but we still have a few more Sharktails to share. They haven’t lost their bite just yet! Enjoy these killer shark-themed cocktail ideas as you channel-surf TV this weekend.

And don’t think our Sharktails are dead in the water just because the week’s almost over. Saturday, as all the sailors and fishermen know, is National Rum Day, so we’re floating a few ideas for tasty rum drink recipes as well as tequila drink recipes. We’re in the tank for all of these Sharktails. Cheers!

Hungry Shark Daiquiri

Rum Drink Recipe: Hungry Shark Daiquiri

    • 4 ounces Doorly’s Macaw White Rum
    • 1 cup coconut water
    • 4 ounces Coco Real Cream of Coconut
    • 1 ounce grenadine (plus more to pour into the shark’s mouth)
    • 1 cup ice
    • Garnish: plastic sharks

Fill blender with Doorly’s Macaw White Rum, coconut water, cream of coconut, ice and grenadine. Blend mixture and pour into serving glass. Garnish with plastic sharks filled with grenadine. Yield: 2 servings

Shark Paloma

Tequila Drink Recipe: Shark Paloma

  • 2 ounces Don Sergio Blanco Tequila
  • 1/2 lime, juiced
  • 5 fresh cherries
  • 1/2 cup ice
  • Grapefruit soda
  • Garnish: Fresh cherries and a plastic shark

To a cocktail shaker add Don Sergio tequila, lime juice, four cherries and ice. Muddle mixture, shake for 20 seconds then pour mixture into serving glass. Top with grapefruit soda. Garnish with one more cherry and a plastic shark. Yield: 1 serving

We have so many shark-themed cocktail recipes flying around, it’s like a drinknado in here! As shark season continues, test the waters with some more killer cocktail recipes for your TV-viewing parties. Try an Irish cream recipe and our rum cocktail recipe — hey, you’re barely taking a bite out of all the possibilities. And what goes well with Sharktails? Oh, you know, just some nibbles.

Shark Attack Shot

Irish Cream Recipe: Shark Attacks

  • 2 ounces Mr. Stacks Blue Curacao, chilled
  • 1 ounce Fennellys Irish Cream, chilled
  • 4 bar spoons grenadine

Pour Mr. Stacks Blue Curacao into shot glasses. Layer the Fennellys Irish Cream on top of the blue curacao. Then drip the grenadine into the shot glasses. Serve immediately. Yield: 2 servings.

Shark Fin Daiquiri

Rum Cocktail Recipe: Shark Fin Daiquiri

      • 2 ounces Doorly’s Macaw White Rum
      • 1/2 cup coconut water, plus more for ice cubes
      • 6 strawberries, hulled (4 for the drink, 2 for garnish)
      • 1/2 ounce Aperol
      • 1 banana
      • 1 teaspoon grenadine
      • 1 cup ice

Fill blender with Doorly’s Macaw White Rum, coconut water, strawberries, Aperol, banana, and ice. Blend until smooth and pour into serving glass. Top with grenadine. Garnish with coconut-water ice cubes made in shark fin molds and strawberries skewered on a paper straw. Yield: 1 serving.

Don’t let shark season sneak up on you! Gather your chums together, get some fin-spiration with these killer sharktails and transform your TV-viewing party into a Jaws-dropping good time. It’ll be a real frenzy! We think you’ll agree each drink is so good … you’re gonna need a bigger glass.

Shark 75

Gin Cocktail Recipe: The Shark 75

  • 4 ounces G&J Greenall’s Gin
  • 1 lemon, juiced
  • 1 cup ice
  • 1 bottle blue soda (We used Jones Blue Bubblegum Soda)
  • 2 maraschino cherries
  • Blue gummy sharks, for garnish

Add G&J Greenall’s Gin, lemon juice and ice to a cocktail shaker. Shake, then strain mixture into serving glasses. Top with blue soda and drop a cherry into each glass. Garnish with gummy sharks on skewers. Yield: 2 servings.

Shark Bite Martini

Vodka Martini Recipe: The Shark Bite

  • 2 ounces Veil Cherry Vodka
  • 1/2 cup ice
  • 1/2 jalapeño, sliced
  • 1 ounce sweet vermouth
  • 3/4 teaspoon grenadine
  • Additional jalapeño, for garnish

In a cocktail shaker combine vodka, ice, sliced jalapeños, vermouth and grenadine. Shake mixture for 20 seconds, then strain into a shark glass. Garnish with jalapeño. Yield: 1 serving.

Shark Tank

Rum Cocktail Recipe: The Shark Tank

  • 2 1/4 cup Largo Bay Silver Rum
  • 3/4 cup sparkling white grape juice
  • 1/4 ounce Mr. Stacks Blue Curacao
  • 10 envelopes unflavored gelatin
  • “Underwater” garnishes: Swedish fish, plastic sea creatures
  • “Beach” garnishes: Shredded coconut, paper umbrella, plastic flamingos, plastic palm trees and other beach-themed accessories
  • Container: We used a large apothecary jar, but any glass container that holds at least 2 liters will work

Add sparkling white grape juice to a medium saucepan. Turn heat on low and slowly sprinkle 10 envelopes of gelatin into saucepan with liquid. Stir until the gelatin is dissolved. Remove from heat and stir in Largo Bay Silver Rum and Mr. Stacks Blue Curacao. Pour mixture into a glass container. Put in refrigerator to chill for 2 hours, then place all “underwater” garnishes in the gelatin mix. Return container to the refrigerator to set (we left ours to chill overnight). Take container out of the refrigerator and rest the “beach” garnishes on top of the gelatin. Use a spoon to dip out gelatin into individual servings in glass cups or bowls, making sure each serving gets a special sea treat!
Yield: 5-7 servings.

Cocktail Recipe: Limoncello Turkish Delight Martini

Seattle-based mixologist and blogger Natalie Migliarini has created another delicious cocktail for us, this time it’s a clever use of sweet and tart Limoncello with a kiss of aromatic rose water.

Don’t let that bottle of Limoncello shiver in the freezer, take it out to create a fun and refreshing Limoncello Turkish Delight Martini.

Turkish Delight MartiniHere’s how to make it!

Ingredients

3 ounces of Bellini Limoncello
1 ounce of vodka (we love Veil vodka)
1/4 ounce of rose water (can also be found in most Middle Eastern markets)
1/2 cup of ice
Garnish: Rose flavored turkish delight candy

Instructions:

In a cocktail shaker add Bellini Limoncello, vodka, rose water, and ice
Shake until mixed and chilled
Strain mixture into serving glass
Garnish with rose flavored Turkish delight candy

Chili oil palomaToday is part two of Seattle-based mixologist and blogger Natalie Migliarini’s favorite tequila cocktail recipes. We shared her first beautiful (and tasty) recipe for a Paloma Chili Flake Jelly Shot with you yesterday. In case you missed it, you can check it out here.

Today, we’d like to share another eye-popping cocktail from her with you. This recipe takes the traditional Paloma’s citrusy zing of grapefruit and enhances it with the sweet heat of chili oil. We think it’s the perfect drink recipe for Cinco de Mayo!

Chili Oil Paloma

Ingredients:

1.5 (oz.) Don Sergio reposado tequila

1/2 cup of grapefruit juice

1 tablespoon agave nectar

1 red Fresno chili sliced

1/4 teaspoon of chili oil

1 cup of ice

Garnish: Chili stem and grapefruit slices

Instructions:

In a cocktail shaker add Don Sergio tequila, grapefruit juice, agave nectar, sliced Fresno chili and ice

Shake for 20 seconds and then pour mixture into serving glass

Top with chili oil

Garnish with chili stem and grapefruit slices

Yields: 1 serving

Cocktail Recipe: Paloma Chili Flake Jelly Shots

Seattle-based mixologist and blogger Natalie Migliarini’s beautiful cocktail photographs caught our eye, so we asked her if she’d share one of her favorite tequila cocktail recipes with us and she kindly obliged!

Here’s her clever jelly shot recipe which combines the citrusy zing of grapefruit and lime with the spicy warmth of red pepper flakes.

tequila-jellyHere’s how to make it!

Ingredients

3/4 cup of Don Sergio reposado tequila

1/4 cup of grapefruit juice

1 cup sparkling grapefruit soda

1/4 teaspoon of red pepper flakes

2 tablespoons of lime juice

2 envelopes of Knox gelatin

Garnish: Grapefruit slices and/or sprinkled with sugar and salt mixture (1 tablespoon salt and 1 tablespoon sugar mixed)

Materials: Natalie used a 1 pound loaf pan then cut into squares but you could also use round molds

In a saucepan add grapefruit juice, sparkling grapefruit soda, red pepper flakes, and lime.

Turn heat on low and sprinkle 2 envelopes of gelatin into saucepan with other liquid, then stir mixture until the gelatin is dissolved.

Remove from heat and stir in tequila.

Pour mixture into loaf pan or molds, and place in refrigerator to chill and set (For best results, chill overnight).

After shots are chilled and ready to serve cut into desired shapes (Natalie used squares/rectangles).

Garnish with grapefruit slices and/or salt and sugar mixture sprinkled over shots.

Yields
14-18 jelly shots (depending on mold used)
